Kodava Cuisine Takes Centre Stage at Sheraton Grand Bengaluru with Three-Day Culinary Showcase
Bengaluru: Kodava cuisine will take centre stage at Sheraton Grand Bangalore Hotel at Brigade Gateway, as its all-day dining restaurant Feast hosts a three-day culinary showcase from October 9 to 11, celebrating the traditional flavours of Coorg.
Led by Chef Smitha Kuttayya, the special dining experience will present a selection of authentic Kodava dishes inspired by recipes, ingredients and cooking methods passed down through generations. With roots in Coorg, Chef Smitha has drawn from her family kitchen and childhood food memories to curate the menu.
The spread features a variety of traditional preparations, including Kaad Mange Curry, made with wild mango; Koli Curry, a Kodava-style chicken preparation; and Baimbale Curry, prepared with bamboo shoots. The menu also includes Onnkkerchi, made using dehydrated shredded pork, Meen Barthad, a traditional fish fry, Balekai Fry and Kadambutt, steamed rice dumplings.
The culinary experience will conclude with Thankbutt, a traditional Kodava dessert prepared with banana and roasted rice powder.
Through the showcase, Chef Smitha aims to take diners on a journey through the flavours and traditions of Kodagu, offering a taste of the region’s heritage through recipes rooted in family and generations of culinary traditions.
